When we first opened, Dave often came in asking, “When are you going to brew a Pilsner?” His persistence paid off, and that’s how Dave’s Pilsner was born—one of the best decisions we’ve made, both in brewing it and naming it after him. But Dave is more than just a fan; he’s a community weaver, always bringing people together. You’ll often find him at Gyppo, enjoying his namesake brew. We may have missed his birthday, but Dave, this one’s for you! Happy belated birthday, and thank you for being one of our biggest cheerleaders. We absolutely love you!
